400-Calorie Dinners

This week I took a trip to the library and came across a few really great books. So not only did I learn that canned brown beans and canned sloppy joe makes for a super wicked cheap chili chip dip... BUT I came across a book called "400-Calorie Dinners" by the Canadian living test kitchen. So needless to say...I NEED to share one of my favourites: 

1. Title: Chick and egg donburi 

What you need: 

3 Eggs
Pinch of petter
2 tbsp pf mirin
4 tsp granulated sugar
3/4 cup thinly sliced sweet onion
4 boneless skinless chicken thighs, cut in 1-inch (2.5cm) chunks
2 green onions, but in chunks
1 cup lightly packed watercress leaves and stems (optional - because I myself don't even understand what this means)
1 cup cliced cremini mushrooms
1 1/2 cups hot cooked rice

This makes 2 or 3 servings. 

In a bowl, beat eggs with pepper; set aside. In measuring cup, whisk together 1/2 cup water, miron, soy sauce and sugar; set aside. Then in a none stick skillet, sprinkle onion evenly over pan top, pour soy sauce mixture over top; cover and simmer over medium heat until juices run clear when chicken is pierced. Pour eggs over chicken; cover and simmer onlow heat until lightly set, about 30 seconds. Serve over rice.

Total calories: approx 341cal

This is one! I am sure this is a lot to read with your busy like. Go to your local library and rent out "400-Calorie Dinners" by "The canadian living test kitchen". Or order it online! You can also ask me any questions if you are not close to a library or store. (I live across a library - new apartment perks). 

Just know meals under 400 cal are also not usually this complicated if you are on the go! There are tons of easily simple ways to make dinner not as heavy.
